Cucumbers are one of the very common ingredients in many Greek salads. Their juiciness and freshness are pleasant in any combination: with tomatoes, lettuce, potatoes, avocado, seafood… Not to mention that cucumbers are one of the major ingredients of the beloved Greek salad tzatziki.
The easy cucumber salad is also very refreshing and suitable for many light or heavier dishes. It’s actually a cucumber, sliced in rounds and seasoned in a very Greek way – with olive oil, dill, vinegar, and some red onion if you want. Onion is optional and is a good addition if you want to spice up the taste; if you are in a mood for something more refreshing, omit onions.
Easy Cucumber Salad Recipe
- 2 cucumbers
- 1 small red onion (optional)
- Red wine vinegar
- Fresh dill
Just peel and cut the cucumber in rounds of your preference. Thin slices of cucumber are tastier because they soak better in the dressing, but it really depends on your personal preferences.
Once sliced, cucumbers should be salted, sprinkled with olive oil and vinegar, and garnished with chopped fresh dill.
The longer the cucumber salad stays in the refrigerator before serving, the better and tastier it will be!
