You can find many fava recipes in the Greek cuisine, but Fava Salad comes in its best when made of fava lentils from Santorini, which are smaller, softer and particular. Fava is one of the common ingredients in the Greek cuisine, and more than any other sort, Greeks like Santorini fava beans. Santorini Fava Salad is famous because the fava beans grow in the volcanic soil of the island.
Again, the Fava Salad is one of the simple Greek salads that can be also used as a dip. Since lentils are pureed after cooking, you can either enjoy it by dipping some nice crusty bread in it or adding it as a garnish to the meat-based dishes and vegetable plates. It goes well with feta as well. Because lentils have some heavy flavor, be sure to add enough lemon juice in it to “break” that heaviness. You can add as much as you like.
Fava Salad Recipe
- 500 grams dried Santorini fava lentils
- 3 medium onions
- Olive oil
- Salt & pepper
Preparation of Fava Salad Recipe
Wash the lentils thoroughly under running water. Place them into a big pot and add water to double the amount of lentils. Water should be cold. Let it boil slowly. While cooking, be sure to occasionally remove the foam from the surface. (You can also soak lentils overnight which will take some dirt out). Before cooking, remove that water, rinse lentils one more time really well, bring them back to the stove with the clean water and let them boil. It’s good to remove the foam even if you have previously soaked the lentils.
Now, add one of the onions, chopped loosely, then the salt and olive oil. Simply follow your taste with salt and olive oil. Let it simmer on a lower heat for about one hour. When lentils become soft and little bit mushy, they are ready. Let lentils cool down a little and put them in the blender and make a puree. Add more olive oil to make sure that the puree is not dry, then the freshly squeezed juice from one lemon, the finely minced two onions and season the mixture with more salt (if needed) and pepper.
