Mixed greens are practically an unavoidable ingredient of the summer salads in Greece. Mixed Green Chicken Salad Recipe
- Chicken breast, cut
- Pine nuts
- Dry oregano
- Olive oil
- Red wine vinegar
Prepare the chicken breast and if you grill it, grill the whole piece and cut it afterwards. Otherwise, cut in the bite-size chunks and sauté them. Roast the pine nuts at the stove without using any oil. Take them out and let them sit for awhile. Grind feta and put aside. Wash the greens thoroughly and cut them in pieces. Place the greens, pine nuts, croutons, and grinded feta into the bowl. Season everything with olive oil, dry oregano and vinegar. At the end, add the chicken and serve.
