When making Greek salads, possibilities are unlimited – Rocket Beets Cucumber Raisin Salad confirms the rule. Rocket and beets go well together, as it was shown in other recipes, but adding something completely different to that combination – like cucumbers and raisins- makes the whole experience anew. Peppery taste of rocket, somewhat tart flavor of beets, crispy cucumbers and sweet Greek raisins are just so yummy together that it’s almost a sin to omit them.
The secret of this mixture is probably in the fact that these ingredients combine warming and cooling sensations when eaten. The most important thing is to remove seeds from cucumber since that’s the juiciest part of it, and to avoid excessive moist in the salad. The best raisins you can add to this salad are Corinthian raisins, very typical for Greece. They are smaller than ordinary raisins, very dark and pleasantly sweet. Of course if you cannot find Corinthian raisins you can use any small dark raisins you want.
Rocket – Beets – Cucumber – Raisins Salad Recipe
- 400 gr. rocket
- 2 medium beets, cooked and sliced
- 1 big cucumber
- 150 gr. of Corinthian raisins
- Olive Oil
Peel cucumbers and remove the middle part, where seeds are. Chop the “meat” of cucumbers, place them in the bowl and salt them a little. After a few minutes, if there is a juice at the bottom of the bowl, throw it.
Now, add washed and dried rocket and cubed in small pieces previously cooked beets. Salt, add olive oil and be lavish while doing that, squeeze a juice of one lemon, and mix well everything. Add more olive oil and lemon juice if needed.
At the end, generously sprinkle raisins over the salad, and serve immediately. One of the useful suggestions is to keep all ingredients refrigerated (except for olive oil) before starting making this salad. You can serve it with grilled meat, fish or seafood.
